A TASTE OF POLYNESIA
As a member of Relais & Châteaux, gastronomy is a crucial part of how we express our passion and affection for Polynesian life. We are proud of our islands' culinary culture and strive to celebrate the many ingredients, local species and sheer abundance of our tropical archipelago in dishes that are as creative as they are deeply rooted in place.
Our three restaurants are guided by the same spirit that once guided Polynesian navigators across the Pacific — curiosity, courage and a deep connection to the natural world. The va'a, or canoe, made those extraordinary voyages possible, and it gives each of our restaurants its name, its story and its soul. Objects and artworks in each space bring that legacy to life, reminding guests that every great journey begins with a sense of wonder.
Hawaiki Nui
Hawaiki Nui is our main restaurant, and welcomes diners for breakfast and dinner to its wonderful treehouse-like setting. Set high amid lush, shady foliage, diners enjoy commanding views over the lagoon and the hotel’s gardens.
The restaurant's name symbolizes ‘the great land of origins’ in Tahitian: according to Polynesian tradition, Hawaiki is the birthplace of gods, rulers and men. Its name also references the annual Hawaiki Nui canoe race, the premier outrigger event in French Polynesia, which is renowned for its challenging course and enjoys special cultural significance. A V6 canoe, a one-time winner of the race, hangs from the ceiling as a design centerpiece.
The day begins suspended among the treetops, the lagoon at your feet and the unhurried pleasure of a breakfast that feels as generous as the islands themselves.
For dinner, Chef Jérémy Weiss presents a wide selection of dishes centered around Polynesian produce, fruits, vegetables, herbs, spices and flowers that cleverly reinterpret classic French and international dishes.

Titiraina Restaurant
Named after a traditional Polynesian game that teaches children the art of sailing, Titiraina brings that same spirit of lightness and freedom to our beach restaurant.
Relaxed in spirit but generous in flavor, the menu draws from the ocean and the land, with the flavors of Tahiti at its heart and international influences adding depth and variety.
Once a week, Polynesia reveals the full depth of its relationship with the ocean. The catch-of-the-day from local fishermen, drawn from some of the most biodiverse waters in the Pacific, is displayed on a bed of ice, inviting guests to choose their own fish to be barbecued to order.

Tipairua Restaurant
Tipairua is Le Taha’a’s flagship gastronomic restaurant, with a reputation for astonishing culinary theater.
Open in the evenings for formal dinners, it is named for traditional tipairua double canoes, typically used for longer sailing voyages on the high seas, associated with discovering and colonizing new lands. You can see one represented in the restaurant’s permanent art collection.
The restaurant’s intimate, candlelit setting is wonderfully romantic – the ideal backdrop for five-course degustation menus, featuring creative, contemporary dishes that bring to life a full spectrum of Polynesian flavors and island nature fused with French culinary influences. Enhance your experience with specially chosen wine pairings.

Manuia Bar
Our beach and pool bar specializes in original Polynesian cocktails served beneath the shade of coconut palm trees. Better yet, feel fabulously decadent by enjoying a drink without leaving the pool, at our swim-up bar.
Manuia is Tahitian for ‘Cheers’, and the focus is on refreshing drinks with island flavors.
Our selection of signature Champagne cocktails epitomizes the approach, pairing France’s best-known export with local fruits, house-made spirits and syrups.
A selection of wines is available by the glass or bottle, alongside local and international beers and spirits.
The bar also offers light snacks after Titiraina Restaurant closes.

Tiki Bar
When the last light fades over the lagoon, Tiki Bar is where the evening finds its rhythm, low lights, the sound of ice in a shaker, the scent of the islands in every glass. Classic cocktails with a Polynesian twist, light snacks, tapas and sharing boards make it the natural place to let the night unfold.
The drinks list feels like a walk through our fragrant gardens. The eponymous Le Taha'a cocktail — featuring Rhum blanc, vanilla and coconut liqueur, banana, lime and coconut — beautifully sums up the colorful, aromatic and full-flavored approach.
Other tropical flavors include hibiscus, mango, basil, passion fruit and chilli, used in refreshing Polynesian Punches or more complex stirred drinks made with local rhum, all offering an authentic taste of Motu Tautau. Tiki Bar also offers Le Taha'a's most comprehensive selection of spirits, focusing on local and international rums.
To eat, the bar offers a range of sophisticated, savory bites, from cheese and sashimi to caviar and foie gras.

Ice Cream Parlour
The gardens offer many reasons to linger, and our ice cream parlor is perhaps the most persuasive. Housemade and rooted in the flavors of the islands, the selection is led by our signature Taha'a vanilla, its rich, floral and subtly spicy notes a reflection of some of the finest vanilla grown anywhere in the world. Seasonal flavors complete the offering, always changing, always local.
Warm waffles, made fresh to order, are available for those who like their pleasures a little warmer.

A UNIQUE FUSION
The taste and flavors of our island terroir is unmistakable. Here, the ocean is everything and our menus reflect the incredible fish and seafood that is central to our lifestyles. Equally, our dishes also bring to life the vibrancy of Polynesian nature, and the sunshine-filled flavors of local produce–especially the sweetness of Taha'a-grown vanilla, known as 'black gold of the Pacific.' It is distinguished by its rounded, balanced aromas, featuring notes of caramel, anise and a hint of chocolate, and we use it in sweet and savory dishes alike.
Our chefs nurture longstanding relationships with fishermen, farmers and other local producers to ensure the quality and freshness of all ingredients. By insisting on organically grown, sustainably sourced produce, we are helping to protect French Polynesia’s biodiversity and preserve the natural equilibrium of the beautiful ecosystem we are part of.
In a reflection of our cultural heritage, we also incorporate French savoir-faire in our cooking, creating a unique culinary fusion. This approach blends Polynesian tastes and flavors with classic and cutting-edge French cooking techniques, along with other international influences.
This culinary fusion can also be experienced in our two on-site bars, which serve a selection of cocktails that integrate local flavors in original creations and twisted classics. Alongside, you'll find new- and old-world wines, international beers, spirits and liqueurs, and plenty of non-alcoholic alternatives too.
